Marking Champagnat Day

On the eve of Champagnat Day, the College welcomed Br Darren Burge, Vice Provincial, back to the College to participate in La cena dei fratelli (Brothers’ Dinner).

This initiative is based on the vision of providing students with an opportunity to spend time working with Marist Brothers as we celebrate the Feast of our Founder, St Marcellin Champagnat. This Dinner also doubled as a cooking competition, which brought together Marist Brothers, staff as well as chefs to compete for bragging rights at an annual staff dinner on the eve of Champagnat Day. Each of the competitors were paired up and given the challenge of preparing an Italian-themed, alternate menu course for 50 guests.

Thanks to Frank Condi who joined us as guest judge along with chefs Steve and Naomi from Edgar’s, Tony Sullivan, Glenn Slater, and recently retired staff member, John Folan.

The Senior Hospitality students enjoyed working for their team captains to prepare stunning Italian food ranging from a Duck Ragu with Pappardelle to a Classic Italian Tiramisu. Thanks also to Erinn Elliott, Simon Brown as well as the social committee for all their work to make this event a success.
